This cheese began appearing in the markets in the middle of the 1800's. It is said that an Auvergnat farmer sprinkled some mold from rye bread into his milk curd, and then pierced the curd with a needle. Thus, the curd was more able to develop blue veins. The practice spread throughout the region, and Blue d'Auvergne was granted an AOC certification in 1975. It is produced from milk within the entire area of Auvergne. The smell is strong and attests its pungent taste. The taste is pastoral, grasses and wild flowers. For pre-cut portions, choose our 6 lb. case.
